Tuna with orange sauce from Chef of Lesnaya skazka Restaurant
The Chef of Lesnaya skazka Restaurant Rakif Gabibov demonstrated to us how to cook tuna with orange sauce – light, rich, at the same time healthy, bright and nice dish.
Ingredients (for 1 portion):
- Tuna – 160 g;
- Orange – 100 g;
- Pumpkin – 120 g;
- Spices – 5 g;
- Sesame – 5 g;
- Salt – 3 g;
- Olive oil – 30 ml;
- Soya sauce – 10 ml;
- Butter – 5 g;
- Mint – 5 g;
- For sauce:
- White wine – 15 ml;
- Fresh orange juice – 40 ml;
- Butter – 15 g;
- Orange zest – 5 g.
Cooking sauce
Step 1
Cut peeled orange into small slices.
Step 2
Cut small section of skin over the orange.
Step 3
Dice orange skin to get zest.
Step 4
Warm up white wine in a frying pan.
Step 5
Stir warmed up wine with fresh orange juice.
Step 6
Add orange zest and butter to the frying pan and get the mixture boil. The sauce is ready.
Cooking a dish
Step 7
Slice the orange.
Step 8
Peel slices of orange and cut slices crosswise.
Step 9
Cut pumpkin into cubes.
Step 10
Put pumpkin on a frying pan and cook it in boiling water. Then pour off the water.
Step 11
Add orange to the pumpkin on the frying pan, fry a little on olive oil and add butter while frying.
Step 12
Marinate tuna in salt, spices and soya sauce.
Step 13
Coat marinated tuna in sesame.
Step 14
Fry tuna on olive oil from all sides.
Step 15
Cut fried tuna into big slices.
Step 16
Arrange stewed pumpkin with orange on a plate.
Step 17
Place slices of tuna on top.
Step 18
Sprinkle with the sauce and dress with a mint twig. Bon appetite!
