The English are used to looking down on their own cuisine. When asked about their favourite national dish, they often shrug awkwardly, smile and say they prefer tea for lunch and tea with milk for dinner. However, their highland neighbours Scots, who are proud people valuing their independence, are not so modest. They justly consider their ancient cuisine to be original and interesting, so when asked which national dish they recommend, they start naming various delicacies eagerly and enthusiastically.
What I present here is some of the recommendations given by my Scottish friends as well as interesting recipes from old cookbooks. Just, please, never try to cook famous haggis at home - you will never succeed as, alike real whisky, it can only be made in Scotland. Although, when you are in that wonderful country, you will have a chance to appreciate Scottish pudding they make from anything including chocolate.
