Salad with beans and artichokes from Marseillaise Restaurant
Chef of the restaurant Vladimir Petrov has been living in France for a long time where he worked as Chef in prestigious restaurants. He taught us to cook the salad with beans and artichokes, one of the main products in the French culinary. Such salad perfectly suits the summer weather as it is abundant in vegetables and greens, full of juicy ham notes, moderately light, moderately rich and with piquant taste.
Ingredients:
- Slices of Parma ham, 30 g,
- Handful of green beans, 90 g,
- Average artichoke marinated in oil, 165 g (you may take more artichokes if you want),
- Baby potatoes, 3-4 pc;
- Small fresh tomato,
- Cherry tomatoes, 4-5 pc;
- Dried tomato,
- Mix lettuce / arugula, 1/3 pack (40 g),
- Olive oil, 1 tbsp,
- Garlic oil, 1 tea spoon (to your wish),
- Balsamic cream for dressing, a few drops,
- Lemon juice, a few drops.
Step 1
Prepare all ingredients, boil potatoes and cool down, boil beans, cut the ends and cool down.
Step 2
Halve cherry tomatoes.
Step 3
Slice potatoes.
Step 4
Slice dried tomato.
Step 5
Cut the artichoke alongside and remove the oil beforehand.
Step 6
Cut tomato alongside and remove the flesh.
Step 7
Cut tomato into 0.5-cm cubes.
Step 8
Place mix lettuce in a bowl.
Step 9
Add beans to the lettuce.
Step 10
Add sliced baby potatoes to the salad.
Step 11
Then add cherry tomatoes.
Step 12
Season the salad with the olive oil and lemon juice or garlic oil (to cook garlic oil you may mix olive oil and blended garlic). Mix up the salad.
Step 13
Dress the salad arranges on a plate with artichokes.
Step 14
Top with slices of Parma ham, tomato cubes and dried tomato cubes. Sprinkle with olive oil and Balsamic cream. You may serve it. Bon appetite!
