Svekolnik is a variety of cold soups. Since we have an early spring now, we might need them quite soon. As the name suggests, beetroot is an obligatory ingredient in svekolnik. The soup is better with young small beetroots, but the last year"s beetroots would not spoil your svekolnik. Not only kvass makes the basis for svekolnik, but also beetroot stock, thick sour milk, kefir, yoghurt or matsoni. You can find these different from the classic recipe, but a recipe is always just a basis to create a dish that suits only you.
