(serves 6) 2 pork loins (350g each) 1 crushed clove of garlic, 1 tbsp brown sugar, 1 tsp grated lemon zest, 1/2 tsp ground ginger, 1/2 tsp salt, 1/4 tsp ground black pepper, a pinch of grated nutmeg, a pinch of ground allspice, a pinch of ground red pepper, 2 tsp plus 2 tbsp dark rum, 300ml chicken stock
Preparation time: 10 minutes plus "rest"
Roasting: 30-35 minutes
