Pokhlebka is a vegetable soup that includes onion and spices different for each kind. Spicy parsley, dill, celery and garlic are the most frequent components. Light aroma of pokhlebka that can be spoiled by badly rinsed or peeled vegetables. To save its wonderful aroma and taste, one should know the order of putting the vegetables in and the time of cooking for each vegetable and spice. If you overcook the pokhlebka, the aroma will disappear and the broth will grow turbid. Real pokhlebkas are always clear, and each has its colour. Unlike other soups, pokhlebkas are cooked without fats and oils as clear vegetable broths. Soured cream or, more often, cream can be added to whiten the broth. But whitening or adding butter change the taste of pokhlebka. Pokhlebka is served hot right after it has been cooked and eaten with fresh rye bread. It is not recommended to leave the pokhlebka for the next day and to reheat it. Bon app
