The Norwegians are deservedly proud to be the world’s leading suppliers of salmon. Altough the Norwegian herring is just as popular far beyond Scandinavia. Traditional Norwegian recipes are occasionally used outside the country but they are usuallu adapted to local culinary preferences. Indeed, not many people would eat herring with jam like the Norwegians do, but many love making snacks, main course and soups from norwegian fish.

Salmon salad

Ingredients:
400 g hot smoke cured salmon
1 cup long rice
2 small onions
sunflower oil for cooking
15 g butter
soured cream for dressing
salt and pepper

Cook the rice in 2.5 cups boiling water with the butter. Fry the onions in the oil at medium heat until golden brown. Fillet and chop the salmon. Chil the rice, combine with the onions and the salmon, add salt and pepper, dress with the soured cream.

Norwegian herring u dill omelette

Ingredients:
200 g filleted slightly pickled Norwegian herring
4 eggs
1 small onion
sunflower oil растительное масло
1 small dill bunch
salt
watercress for garnising

Chop the onion finely and fry at medium heat in the oil. Whisk the eggs well, add to the onions, season with salt. Cut the herring into long stripes and wrap into rolls. Put the omelette on a large dish, cut into equal pieces, put a piece of herring roll on each of the omelette pieces. Sprinkle with the finely chopped dill. Optionally, garnish with the watercress.

Salmon en croute

Ingredients:
500 g salmon
1 cup flour
1 egg
