However, we are used to smoking such kinds of herring as sprat and anchovy; while herring itself is salted and used as an ingredient in many tasty dishes.

"Russian" Starter

O
n the Russian table herring is used for any occasion. The most simple and reliable national recipe with herring is boiled potatoes and herring with onions poured with sunflower oil. This time-tested combination can be served hot and cold.
Ingredients:
1 herring,
6-7 middle-sized potatoes,
1 onion,
100 g soured cream
Boil, peel and finely dice the potatoes. Fillet the herring, cut it into small pieces. Cut the onions in half-rings. Mix the potatoes, herring and onions, dress with soured cream. A little mustard can be added to the dressing.

Omelette with Sprats

t turns out that the well-known and loved in Russia sprats (tinned smoked sprats in oil) are not a separate species of fish, but a distorted Latin name for the Baltic herring. So, sprats are made from Baltic herring and anchovy, and sometimes smaller Clupeidae (herring family) fish. Today we are offering you the recipe that is popular in Northern Germany, first of all in Schleswig-Holstein, the birthplace of Catherine the Great.
Ingredients:
4 eggs,
100 g sprat,
1 onion,
butter for frying,
salt, pepper
Cut the onions in rings, brown them in melted butter. Lay the sprats over the onions. Whisk the eggs thoroughly and pour the onions and sprats with them. Add the salt and pepper and cook covered at low heat. Can be garnished with herbs when served.

Finnish Herring Baked Pudding

Ingredients:
5-6 middle-sized potatoes,
1 lightly salted herring,
1 onion,
2 eggs,
2 tbsp flour,
100 ml milk,
3 tbsp oil,
dill for garnishing,
salt, pepper
Peel and thinly slice the potatoes. Butter the pot and lay out the potatoes on the bottom evenly. Cut the fish into small pieces, lay it on the potatoes. Cut the onion into rings, lay it on the fish. Sprinkle with flour, drizzle with oil, add salt and pepper, cover and cook at low heat. Meanwhile, mix the milk and whisked eggs, pour the fish with the mixture and put in the oven for 10 min. Garnish with herbs and serve.

"Southern" Salad

Ingredients:
1 herring,
2 beetroots,
150 g walnuts,
1-2 cloves garlic,
100 g soured cream,
1 tsp olive oil,
salt
Boil, peel and coarsely grate the beetroots. Fillet the herring, cut it into small pieces. Crush or finely chop the walnuts and garlic. Mix the ingredients, salt and dress with soured cream mixed with olive oil.
