In the course of its long history Russian cuisine has incorporated and assimilated a lot of various culinary traditions – from Mongol-Tatar to French –having grown into one of the most diversified cuisines of the world. In the course of its long history Russian cuisine has incorporated and assimilated a lot of various culinary traditions – from Mongol-Tatar to French –having grown into one of the most diversified cuisines of the world. However, the original everyday table of the Russians was rather modest: it consisted of flour products, porridges, fish, mushrooms, and vegetables. Unlike French, American or Asian cuisines, Russian cuisine does not tend to combine most different ingredients in one dish; on the contrary, vegetables known in Russia since the tenth century – cabbage, radish, turnip, peas, or cucumbers – used to be cooked (pickled, boiled, baked or raw) and eaten separately. The dishes we are presenting today are very easy to cook and delicious.
 

Chernogorski Soup
 
400g white beans
1.4L cold water
3 pickled gherkins
2 tbsp flour
2 tbsp butter
100g sour cream
fresh herbs

Soak beans in cold water for 5 to 6 hours, then boil them in the same water until soft, and press through a sieve with the broth. Boil peeled and sliced cucumbers in a separate pan in a small amount of boiled water. Add flour fried in butter. Stir, bring to boil, combine with the beans. Dress with sour cream and fresh herbs.
 
Russian Golubtsy with Sturgeon
