Elena Nikiforova, Chef of Shinok restaurant, went to Odessa searching for authentic recipes. Returning back to Moscow, she created a new special menu consisting of six dishes: low salt herring rolls, tender lard stewed in honey with herbs, pike perch in oven, chicken leg stuffed with cep mushrooms, "chestnuts" cooked of tender chicken fillet, mushrooms with whole walnuts in the middle and tender sponge apple fritters.
