Pie with whitefish shaped as fish from Chemodan Restaurant
Chef of Chemodan restaurant Daria Glazun is sharing with restoran.ru readers how to cook a special Siberian pie with whitefish per unique author’s recipe. This juicy and scent-laden pie is cooked upon the order at the restaurant – such dish won’t leave anyone hungry.
Ingredients:
- Whitefish fillet with skin — 900 g
- Yeast-free flaky dough — 500 g
- Onion — 250 g
- Homemade mayonnaise — 50 g
- Salt — 2 g, Black peppercorn — 1 g
- Bay leaf (steamed) – 2 pc
- Butter — 30 g
- Flour — 50 g, Egg — 2 pc
- For pie dressing:
- Lettuce leaf, rose peppercorn, lemon.
Step 1
Peel and cut onion into fine quarter-rings.
Step 2
Fry it on the butter until golden colour.
Step 3
Cut whitefish filet into big slices at the corner 45 degrees C.
Step 4
Mix up fish with fried onion, add pieces of bay leaf.
Step 5
Season with salt and pepper.
Step 6
Add two spoons of homemade mayonnaise.
Step 7
Mix up all with hands.
Step 8
Put two pieces of yeast-free flaky dough topped with flour.
Step 9
Finely roll them out shaped as rectangle. Daria advises to leave the central part much thicker than edges to keep the filling better inside.

Visually divide the rolled out dough into three equal parts and put prepared marinade in the centre.

Put pieces of whitefish in the fish shape.

On top of the filling put slices of butter and bay leaf exchanging them.

Cut the side parts of the dough with knife into sticks 2 cm wide.

So is the dough looks like fully prepared to wrap the filling. Daria recommends making sticks from both sides on the same level and the same number.

Put the fish into the dough, exchanging sticks, shape the head and tail. You are welcome to improvise in this case.

Put the fish on the baking pan covered with baking paper.

Top the pie with beaten egg to make it have a nice brown crust. So, beat 2 eggs into a bowl. Add a spoon of mayonnaise and whip with spatula. Top the pie with egg and mayonnaise using a silicone brush.

It is important to cover the whole surface thoroughly, especially the bottom part. After it bake the pie in the oven heated until 175 degrees C for 30-40 minutes.

Put the baked brown pie on a dish, dress with chopped lettuce leaf, top with rose peppercorn and lemon slices.

Daria recommends serving black tea with lemon with the pie.
