Famous white truffle from Alba will be presented at Percorso restaurant from 17th November till 13th December.

Chefs decided to demonstrate the guests famous dishes from Piedmont built on fine combinations of the white truffle with different ingredients and also to offer good wine: this time they sel ected Ferrari Perle Brut and Ferrari Perle Nero.

TARTUFO E BOLLICINE

CAPESANTE – Scallop Carpaccio and topinambur with sauce scented with fried potato, 860 rubles.

MANZO MARINATO – marinated marble beef, truffle Sabayon, tuna sauce, dried raspberry, 890 rubles. 

BOCONCINI DI PANE AL LARDO – tasty sliced of warm bread with lard, Nebrodi ham, persimmon, mascarpone, 950 rubles. 

FETTUCINI ALA CARBONARA – boiled egg, truffle, smoked pancetta, Sarawak pepper, 450 rubles. 

RISOTTO AKURELLO – RICE STORED FOR 7 YEARS, Pecorino reserve del fondatore cheese, oil scented with cedarwood, 850 rubles. 

RAVIOLI DEL PLIN – ravioli stuffed with stewed meat, ricotta emulsion, bagna cauda foam, 650 rubles. 

CASTAGNA – chestnut cake, warm hazelnut sauce, mandarin, 520 rubles. 

The Chef recommends 3 g white truffle fr om Alba for each dish.
