Fish offer starts on the 1st of April at Schengen Restaurant. During two weeks until April 14th you may try green salad with grilled cisco, fresh avocado, peas and pumpkin oil dressing at the restaurant. As a starter, chef offers marinated wolffish rolls with algae nori and spicy mango sauce; as a main course there is Murmansk halibut fillet parboiled with vegetables in thick cream broth with spicy herbs. This dish is interesting because owing to the rich broth and vegetables, it slightly resembles stew but the fish is cooked in such a way that its structure is not broken while the fillet remains tender and soft.
From April 15th to April 30th three new fish dishes will be brought to the guests’ attention: Ladoga cisco fillet, grilled with kohlrabi, parsnip and tapenade with anchovies, olive oil and capers; wolfish fillet fried on a pan with tender mashed potatoes, cream sauce, radish and onion; light cod rolls with jamon, fennel, fresh grapefruit and sauce based on white wine with curcuma and herbs.
