Bretzel
The restaurant of the East European cuisine Bretzel has been open in Chaikovskogo street.
Its official opening ceremony was planned to 27th March. Creators are young businessmen and big beer-lovers. Travelling quite often to Germany and Czech Republic they finally decided to open their own restaurant. They decided to complement a line of high-quality German beer with a 'male' cuisine oriented to daily food, understandable dishes and big portions. “Italian and Pan-Asian cuisines are everywhere now and people have got tired of it. You cannot be full with only creative approach every day”, - comments a representative of the restaurant.
The kitchen is headed by brand chef Kirill Olkhovskiy. Before joining Bretzel, Kirill used to be a brand chef at Tinkoff, set up a cuisine at Gosti Restaurant and opened Sauces Restaurant. The Bretzel menu includes traditional dishes of the German cuisine but is not limited to it: some positions have been adapted for the Russian audience and plus Kirill worked out a few author's appetizers. They are not limited to standard beer snacks: for instance, the chapter includes drafli (hash brown cooked in a wafer oven) made of fresh potatoes and served with cod caviar.
Also among appetizers there are Baltic anchovies on rye bread toasts, low salted trout with cucumber relish and cream cheese. The chapter of salads includes smoked cheese with three sorts of tomatoes, chicken with quinoa, smoked salmon with mustard & orange sauce.
Hot courses amount to a dozen and the menu is expected to enrich: there will be shank, sausages per home recipe, and their assortment will also keep increasing. Brezels (German baked bread shaped into a knot) with different toppings and sweet brezels are also expected soon (the baking pan was especially ordered in Germany for them).
They prefer to use local products at the kitchen. Democratic business lunches and a kids' menu will be launched in the beginning of April.
As for beer, currently there are 9 sorts of draft beer performed including products of Russian craft breweries. The line is planned to reach 15 sorts in the future. There are 24 sorts of bottled beer, mainly German beer and French cider. Beer produced at private breweries in Germany will soon be available at Bretzel – it will be directly delivered to the restaurant.
The local interior highlights and complements the idea of the pub with a males' cuisine and interesting sorts of beer. While thinking over the image of the restaurant, the owners oriented at the style of South Germany and invited designer Lena Pesterova to draw-up the hall. They've been cooperating with her for a few years. Strict lines of wooden furniture, open brickwork and ceiling paintings are revived with handmade bottle lights, arm-chairs in a patchwork style and a bright stained-glass and still-life painting. The corridor wall has been decorated with old opened books. They brought vintage things from Germany and placed a running Soviet motobike Izh at the lobby. The VIP hall is equipped with a nice fireplace. The sun porch for smoking hookah will soon be available for the guests.
The average bill is 1300 rubles.
