The following dishes will help you to feel the atmosphere of ‘tsar’s hunting’: salad with smoked wild duck, Ruccola and raspberry sauce, rain deer fillet with asparagus and Forest berries sauce, quail baked with forest mushrooms risotto.
You won’t need a rifle, traps and several days of patient expectation to taste real finely cooked hare, marinated in champagne with potato fritters, chanterelle sauce and beet mousse.
