Having returned back from the culinary tour at Stockholm restaurant Langbro Värdshus, he initiates the first festival of the Nordic cuisine in Moscow.
Swedish cuisine and Chestnaya kukhnya from Sergey Yeroshenko have much in common: local seasonal products, wild fish, nourishing meat dishes. The meal traditionally starts from fish in Sweden. So, Sergey opens the festival with muksun ceviche in original combination with fried octopus, persimmon and herbal sauce (590 rubles). His option for reindeer, so popular for the Swedish menu is serving with dark chocolate sauce cooked on reindeer bones extraction which gives the meat a striking rough and slightly bitter flavour (870 rubles). The festival menu at Chestnaya Kukhnya also includes Nordic wrapped balls with crab meat and aromatic morels sauce (820 rubles). Following the rules of the Northern cuisine, classic crème-brulee has also been re-designed: Sergey Yeroshenko cooks it with berries and blueberry mousse (350 rubles).
