Artem Dobrovolskiy, the brand chef of Gastronomica holding decided to greet the guests of the Florentini City Café restaurant with a seasonal menu with morels.
A tender taste of morel born on sunny outskirts of the forest perfectly plays in such dishes as ravioli 4 cheeses where a sweet taste of the cheese filling in ravioli is fetched out with dried tomatoes and a note of chorizo, while the dish is seasoned with a cream sauce based on mushroom broth. Morels fried on the butter will dress ravioli giving the dish nuances of aromas and flavours of spring forest.
Pizza with morels with white cheeses is also interesting. Here morels play in the duet with truffle pasta, the queen of delicacies.
