Last autumn CDL Restaurant opened a new page of its culinary history having launched a special offer Russian Organic. Following this tendency, Chef Alexander Popov has created the summer menu Berry Organic.
The Russian cuisine has always respected berries. Berry Organic menu created by Alexander Popov is obvious evidence for it. Here they cook chips of wild strawberries, sauces - of raspberries and sea-buckthorns, jelly - of bog whortleberries and red currants, and they add juniper berries and cranberries to marinades.
For instance, Chef cooks poultry pate with vegetables and forest berries (890 rubles) taking quail and duck meat in wild strawberry coating and serves it with fresh berries and crispy toasts. Another unusual combination is quail with strudel (1250 rubles) when he grills the quail and serves it with berry strudel topped with ginger sauce focusing on bright clutches of red currants. Raspberry pagoda (540 rubles) is served as a dessert: tender nut biscuits with layers of airy custard, fresh raspberries and aromatic orange sauce.
