We may only guess how many efforts it took from restaurateur Arkady Levin to create the real grill in the historical building of The National. Owing to his idea and efforts, the new chapter with dishes on charcoal has been available in the menu now.

Chef Viktor Osipenko cooks meat and fish on smoldering charcoal and also bakes vegetables for salads and as a result of this, the dishes acquire s special aroma. What are we talking about! If you happen to be at the Composer Restaurant, definitely order marinated lamb on stalk burdock with vegetables and duck breast with cranberry & onion jam. Besides meat, the updated menu includes new species of Russian fish. Have you ever tried Siberian nelma, taimen or coho salmon, slightly grilled with lime sauce, for instance?
In any case, do indulge yourself in tasting these dishes which are not often seen at other Moscow restaurants.
