Pumpkin soup
It's dense, spicy and aromatic soup! It's just what needed in the wintertime! Warms up from inside. I like it to warm me up very much. The guests are surprised with unusual soup and with taste, of course.

portions Ingredients:
- Bacon – 200 g;
- Pumpkin – 1.5 kg;
- Onion – 1 pc;
- Celery stalks – 2 pc;
- Garlic – 3 cloves;
- Parsley – a bunch;
- Chili pepper – 1 pc;
- Thyme – 3 twigs;
- Pumpkin seeds – hamdful (100 g);
- Olive oil – 2 tbsp;
- Salt, fresh ground white pepper.
Step 1
Peel garlic and onion and finely chop them. Wash chili pepper, remove seeds (if you want the soup to very hot, leave seeds) and finely chop. Wash the parsley, cut out leaves and finely chop the stalks.
Step 2
Cut bacon into pieces. I always try to take not sliced bacon as it is sliced quite thin and hence, fried too fast (however, it's good for dishes where it's needed fried). As for soups where we need to melt all juices from the bacon, it's better to take a piece. Place a 3-litres saucepan on the heat and put bacon inside.

Cut celery stalks into small cubes.
Step 4
Fry the bacon until brown colour (3 minutes) and keep mixing up. Do not overfry!
Step 5
Then put garlic to the bacon, mix up, fry all together for 1 minute and add onion with celery. If bacon juice is not enough, add olive oil.
Step 6
Stew for a minute or two and put chopped chili pepper and parsley. Stir up.
Step 7
Meanwhile, peel the pumpkin and cut into relatively big pieces. A warning – the skin is hard to cut out.
Step 8
Put in the saucepan with vegetables. Pour two glasses of hot water (you may pour vegetable broth but in my opinion, the tastes are already rich), leave to cook under the cover until the pumpkin gets soft, approximately 15-20 minutes.

Almost forgot – put thyme leaves first and then stew under the cover.

You will get such incredible beauty!

Blend the soup in a blender until the flat mass. Place back on low heat, add hot water as much as you find the consistence good for you. Sprinkle with salt (be careful, the bacon is salty) and pepper, cook until bubbles mixing up. Switch off and let it be for 10 minutes.
Step 12
Serve with chopped parsley leaves and pumpkin seeds.
