Chocolate & nut cake from Berezki restaurant


Cordial Chef of Berezki restaurant Irina Vasina taught us to cook the dessert – chocolate & nut cake. It is not too complicated in cooking and it looks very nice when it’s ready, while interesting notes can be found in its taste.

Ingredients (counted for 4 portions):

Meringues:

  • Whites, 2 pc;
  • Sugar, 150 g.
  • Cream for meringues:
  • Condensed milk, 100 g;
  • Butter, 30 g.

Cream:

  • Boiled condensed milk, 1 can;
  • Butter, 150 g
  • Fried crushed groundnut 

Shortcake:

  • Flour, 1 glass,
  • Sugar, 1 glass,
  • Egg, 4 pc;
  • Cacao, 3 tbsp;
  • Baking powder, 10 g;
  • Chocolate sauce (melted on boiling water):
  • Dark chocolate, 100 g;
  • Cream 33%, 100 g. 

Step 1

Cooking cake starts from baking shortcake. First, beat eggs into a bowl.

Add flour and baking powder to eggs.

Step 3

Then add cacao powder into the bowl.

Step 4

Then add sugar.

Stir thorough the dough for shortcake with aureola.

Step 6

Place the dough on a baking pan, make it flat and bake until it is ready. After it using a special molder cut the ring or a few rings out of shortcake.

To cook meringues stir whites with sugar.

Step 8

Stir well whites with sugar.

Step 9

Place the mass you got into a round pan and bake meringue.

Step 10

Then break meringue with hands and place it into the cream (stir up condensed milk and butter using aureola, place the cream into the fridge where it should be stored before combining with meringue).

To cook cream mix boiled condensed milk, butter and crushed groundnut until the flat mass. Place the layer of cream on top of the round shortcake.

Step 12

Place meringue mixed with cream on top of the condensed milk cream.

Step 13

Then place another shortcake ring on top.

Step 14

Place another layer of the condensed milk cream and make it flat.

Step 15

Top the cake with the fried crushed nuts.

Step 16

The cake is ready and what is left only to place it on a nice dish.

Top the cake with the chocolate sauce.

The final step is to decorate the cake with fresh raspberry and mint twig. The cake is ready.
