Summer tiramisu from Gusto restaurant


Fabrizio Fatucci cooked a special tiramisu – tender, slightly sweet, aromatic and ideal for the hot summer dessert especially for the column «Recipe from Chef».

Ingredients (counted for 3 portions):

  • Savoiardi biscuits, 12 pc (3 for the first layer and 3 for the second),  
  • Fresh orange, 300 ml,
  • Peach/nectarine, 2 pc,
  • Strawberry, 100 g,
  • Grated pistachios, 30 g,
  • Fresh mint, twig.

For cream:

  • Cream 38%, 200 ml,
  • Sugar powder, 80-100 g,
  • Mascarpone cheese, 250 g,
  • Lime, 1 pc. 

Step 1

You will need to prepare all ingredients.

Step 2

Slice peaches into even rings.

Step 3

Cut rings of peaches into sticks and then cut into cubes and arrange in a bowl.

Remove strawberry tails and cut into small pieces afterwards. Arrange in a bowl.

Squeeze lime juice into the bowl with slices of fruits.

Finely chop mint leaves.

Place mint leaves into the bowl with fruits.

Add little sugar powder to the fruits.

Mix carefully fruits with mint in the bowl.

Place mascarpone into a clean plate and mix with sugar powder.

Add cream to mascarpone and sugar powder.

Grate lime zest to the bowl with mascarpone.

Stir up well mascarpone and powder using an aureola until the flat consistence.

Place the cream you got into the confectionery bag.

Coat savoiardi biscuits into the orange juice.

Place pieces of biscuits soaked with orange juice into a glass.

Place the layer of fruits on top of the layer of biscuits.

Place the layer of cream on top of fruits using a confectionery bag.

Repeat this sequence: place biscuits on cream, then place fruits on top and again cream.

Top the dessert with grated pistachios (you may grate them or ground) and dress with mint leaves.
