Baked Cod


This truly homemade and nice dish is always tasty – hot and red or cold. My mum used to cook it with mayonnaise but I prefer a healthier and "chef" variant – onion stewed in cream which becomes our sauce.

Ingredients:

  • Cod fillet – 850 g;
  • Lemon – 1 pc;
  • Onion – 2 small pc; 
  • Butter – 40 g; 
  • Cream 22% - 300 ml; 
  • Cheese (I have Cheddar) – 100 g;
  • Breadcrumbs – 4 tbsp; 
  • Dill – a bunch; 
  • Salt, ground black pepper. 

Step 1

Wash and dry out cod with paper towel. Cut into pieces.

Sprinkle fish with salt and pepper.

Step 3

Put pieces into the baking pan tight to each other. Sprinkle with half a lemon juice. Leave for a while.

Cut the onion into thin semi-rings.

Heat the butter on a frying pan, half of our piece, 20 g.

Fry onion on the butter for a couple of minutes until it gets brown.

Then pour cream into the onion and cook the sauce on small heat.

Meanwhile, grate cheese on a small grater.

Mix it with breadcrumbs. Finely chop the dill without stalks.

Our sauce has been thick. Add salt and pepper, mix up and switch off. Add just a little salt as our fish is already salty.

Squeeze the second half of the lemon into the sauce, mix up.

Then add the dill.

Put the flat layer of sauce onto the fish.

Top with breadcrumbs with cheese.

Cut the rest butter into sticks and put on the fish.

Put into the oven pre-heated until 200 degrees for 20 minutes.

Serve with your favorite side dish. It is certainly perfect with boiled potatoes! I have with cauliflower here.
