Yogurt cupcake with berries
It is a wonderful recipe of cupcake on yogurt. It is incredibly citrus, aromatic with your favourite berries. Take any berries, fresh or frozen. Failures are excluded. But, there is a nuance! If you take a sour berry, for instance, cranberry, you may add sugar.
Ingredients:
- Flour – 2 glasses + 4 tbps for berries;
- Baking powder – 1 tea spoon;
- Salt – 1/3 tea spoon;
- Lemon – 1 pc;
- Butter – 200 g;
- Sugar – 1.5 glass;
- Eggs – 3 pc;
- Natural yogurt – 300 ml;
- Milk – 1/2 glass;
- Berries – 300-400 g.
Step 1
Mix up dry ingredients in a bowl – flour, baking powder and salt. Grate the lemon zest there. Use only yellow skin as white is bitter.
Step 2
Whip butter of room temperature with sugar in the other bowl for about 3 minutes.
Step 3
Beat in eggs one by one and keep whipping.
Step 4
Squeeze lemon juice into the dough and mix up.
Step 5
Pour in yogurt and milk, mix up.
Step 6
Then add flour mixture. Stir up until the flat mass.
Step 7
You will get slide and liquid dough.
Step 8
I took frozen cherries for my cupcake. No need to unfreeze, just put into the bowl and mix up with flour.
Step 9
Put over berries into the dough with hands to avoid extra flour.
Step 10
Grease the baking pan with butter.
Step 11
Pour the dough into the pan.
Step 12
Put into the oven pre-heated until 165 degrees for an hour. Keep an eye, all ovens are different. Check with a toothpick if it’s ready.
Step 13
Cool it down and serve having topped with sugar powder.
