Sometimes I want a ‘cozy’ dish which will warm up with its piquant aroma and will especially refresh with its bight notes of taste… tasty, healthy and rich taste of the Italian rural soup is just what I need. Try to cook a Tuscan soup with white beans and rosemary and I am sure you won’t remain indifferent to ‘a piece of Italy’ in your plate.

250 g mixture for Tuscan soup*;
100 g cervelat sausage;
2 chicken wings;
1/2 onion;
2 small carrots;
1 small red onion;
1 tbsp oil (for frying);
1 tbsp olive oil (for dressing);
2-3 cloves of garlic;
Paprika, chili pepper, black ground pepper – to your taste;
Sea salt – to your taste.
*It consists of white beans Navy, fried vegetables and verdure (tomatoes, onion, carrot, paprika, celery, garlic), ground spices (thyme, rosemary, chili pepper).
Step 1
Put the soup mixture into a saucepan, add water to cover the mixture for 2-3 cm, put it on medium heat for 20-30 minutes.
Step 2
Meanwhile, cook the broth. Wash out the meat, add carrots, red onion and 1.5 litre water.
Step 3
Put the broth on medium heat for 20 minutes. When cooking, remove the scum. Sieve the broth.
Step 4
Add sieved broth to the soup in portions and keep mixing up the soup when needed. So, cook the soup for one hour more until the beans get soft.
Step 5
Finely slice cervelat sausage into semi-rings, add oil and a little of black pepper. Fry until cervelat and onion get golden.
Step 6
Blend the soup in the blender.
Step 7
Add salt and spices to your taste, also pressed out garlic and mix up. Leave the soup for 5-7 minutes.
Step 8
Pour the soup into plates, add fried cervelat and onion, season with olive oil and add more black pepper for to get aroma. Garlic and croutons might be also added for such aromatic soup.
