Soup with green peas and mint
This is a very spring-summer soup! Starting from the colour and ending with a taste. You can take both fresh and frozen peas.

portions Ingredients:
- Mint – bunch;
- Green peas (I have frozen) – 400 g;
- Olive oil – 2 tbsp;
- Salt, fresh ground pepper;
- Sour cream for serving.
Step 1
Separate mint leaves from stalks.
Step 2
Add mint leaves to a 1-litre saucepan with salt and leave it to get boiled for 3 minutes.
Step 3
Then add green peas and cook for two more minutes after it gets boiled. It shouldn’t be overcooked.
Step 4
Pour off vegetables using a sieve into the other saucepan (we need the broth).
Step 5
Combine together peas, mint and 500 ml of broth.
Step 6
Blend with a blender to get it flat.
Step 7
Try for salt and sprinkle with pepper.
Step 8
Sprinkle with olive oil and serve with sour cream.
