Soup with baked vegetables and meat balls


It is a very tasty and healthy soup. All will like it! It’s perfect for kids who might find just vegetables too boring but will definitely like meat balls. As for Messrs vegetarians, they can exclude all steps related to preparing meat balls from the recipe and they will get just a tasty cream-soup. It is good even for those who follow the regime to keep a good shape because it contains no potatoes and meat balls might be prepared without loaf upon the one’s wish. So, this is a soup for all occasions. Owing to the way of cooking vegetables, the vast majority of vitamins are kept!

Ingredients:

  • Celery root – 400 g (1/2 bulb); 
  • Pumpkin – 600 g;
  • Onion – 1 big head;
  • Carrots – 2 average pc;
  • Olive oil – 2 tbsp;
  • Loaf – 2 pieces 2 cm wide;
  • Milk – 1/2 glass; 
  • Beef mince beef – 400 g;
  • Egg – 1 pc;
  • Ground black pepper, salt;
  • Cream for garnishing (optional) – 100 ml. 

Step 1

Soak pieces of loaf in milk and leave it for a while.

Peel celery root.

Cut into 1.5x1.5 cm cubes. Put into a baking pan.

Remove seeds fr om the pumpkin.

Remove the skin.

Cut into cubes just like celery.

Peel the onion and cut into big segments.

Cut peeled carrots into rounds to make them have almost the same size like celery and pumpkin.

Sprinkle all vegetables with olive oil, add salt and mix up.

Cover with foil and send to the oven pre-heated to 180 degrees for 40 minutes.

Meanwhile, prepare meat balls. Put mincemeat into a bowl.

Put loaf with milk into a blender glass or a bowl, break an egg into it and blend with an immersion blender. Mix it with the mincemeat.

Knead out well, sprinkle with salt and pepper and knead out again.

Warm up the water in a saucepan. When it gets boiled, put inside meat balls shaped with wet hands.

When vegetables are ready, take them out of the oven and leave for 10 minutes under the foil.

Put them in the other saucepan (not where meat balls are cooked).

Blend vegetables until the flat puree with a blender.

When the meat balls get floated, it means they are ready.

Dilute vegetable puree with the broth wh ere meat balls have been cooked until the consistence you like more. Try for salt and add pepper.

Then put meat balls into our soup and switch off.

You may garnish with cream when serving. Drop a table spoon of cream into the center of the plate and make a drawing with the other edge of the spoon.
