Salad with prosciutto, melon and goat cheese

Ingredients:

  • Lettuce leaves mix with Ruccola – 100 g; 
  • Small round melon (Cantaloupe) – ½ pc;
  • Pear – 1 pc;
  • Mandarins – 3 pc;
  • Olive oil EV – 3 tbsp;
  • Vinegar with mango – 1.5 tbsp;
  • Prosciutto – 100 g;
  • Goat cheese – 150 g;
  • Salt, fresh ground black pepper.

Prosciutto is row-dry ham. Same as Parma ham in Italy or jamon in Spain. There are not bad Baltic analogues in supermarkets. The main thing is it should be raw-dry. As for melon and pears – take mellow and aromatic. If you can’t find mango vinegar, prepare mashed mango (fresh or frozen), add wine or apple vinegar in proportion 1:1 and leave it for a while. I had small Moroccan mandarins without seeds.

Wash and dry out lettuce leaves.

Halve the melon.

Take out seeds with a spoon.

Cut into semi-rings and remove the skin. Cut the semi-rings into 4-5 segments.

Remove the core from the pear.

Finely slice it.

Peel the mandarins.

Mix up all mentioned above with hands in a big bowl.

Mix olive oil with vinegar. Add salt and pepper.

Arrange the salad on a dish or portion plates. Top with slices of goat cheese.

Then arrange prosciutto nicely curved.

Sprinkle with sauce and serve to the table immediately. It’s possible to eat together with the plate.
