Salad with chicken and curry
Chicken with fruits, curry and homemade mayonnaise – this is what this salad consists of. It is very-very interesting! Celery and walnuts will accentuate the bouquet. Let it be not very usual salad for us add but very tasty. For a wonder, it was created by Americans.

portions Ingredients:
- Boiled chicken – 1 pc (or 2 breasts);
- Walnuts – 4 tbsp;
- Celery stalks – 3 pc;
- Apple (sour-sweet) – 1 pc;
- Spring onion – 3 stalks,
- Grapes without seeds – 300 g;
- Canned pineapple – 5 tbsp;
- Lemon – 1/2 pc;
For homemade mayonnaise:
- Yolks – 2 pc;
- Dijon mustard – 1 tea spoon;
- Curry powder – 1 tea spoon;
- Sugar – 1/2 tea spoon;
- Olive oil (refined!) – 2/3 glass;
- Lemon juice – 2 tbsp;
- Salt, pepper.
Step 1
Prepare the mayonnaise first. Put yolks, sugar and a pinch of salt into the narrow dish (I have a blender glass). Beat up white.
Step 2
Add mustard and beat up again.
Step 3
Afterward keep on beating up and pour olive oil with a thin flow in portions. First – in small portions. Beat up until the flat mass after each portion of oil and only then pour more oil. You can be more confident in pouring the oil when less than a half of oil is remaining.
Step 4
The more oil you add, the thicker mayonnaise is.
Step 5
After beating up the oil add lemon juice, sprinkle with salt and pepper. Beat up until the flat mass for another few seconds and put into the fridge.
Step 6
Cut boiled chicken in cubes. Put into the salad dish.
Step 7
Fry walnuts on the dry frying pan on medium heat. Fry for 1-2 minutes until they get gold, switch off and let cool down.
Step 8
Remove external rough fibres from celery stalks with a vegetable peeler. (You may break the stalk into two halves and remove the skin like from banana). Then cut into cubes.
Step 9
Cut unpeeled apple into cubes, slightly bigger than celery.
Step 10
Put celery and apple into the other bowl, sprinkle with lemon juice and stir up.
Step 11
Finely chop the spring onion and put to the chicken.
Step 12
Put walnuts and curry into the blender and blend them into powder. Walnuts will be blended perfectly with the spice.
Step 13
Put apples with celery into the dish with chicken and add grapes.
Step 14
Then add pieces of pineapple.
Step 15
Add walnuts and pour mayonnaise. Mix up. Put into the fridge for at least 2 hours to get soaked. Better for 4-6 hours.
