Rice with chicken and vegetables

Of course, you can buy a pack of frozen Hawaii mixture or paella in a supermarket and cook it for 8 minutes. However, we are not looking for easy ways, speaking out in favor of healthy own-made food. So, let’s have a look. The course is very good because it’s with a side dish at the same time. Of course, it’s not an authentic paella but many cooking principles have been taken by me from paella recipe.

Measure rice not in grams but in a measuring glass, following the point for liquid, not rice. For one portion we’ll need 65 ml rice and 150 ml water (twice more) or 150 ml rice and 300 ml water for two portions. 


Chicken fillet – 4 pc (2 breasts);

Onion – 1 big or 2 medium;

Carrot – 1 pc;

Sweet pepper – 1 pc (big);

Marrow (zucchini) – 1 medium; 

Garlic – 3 cloves;

White dry wine – 1/3 glass;

Rice – 300 ml;

Canned corn – 1 can;

Grated tomatoes – 500 ml;

Hot water (or broth) – 600 ml;

Olive oil – 3 tbsp;

Black ground pepper, paprika, young chili pepper, salt. 

Step 1

Wash the fillet and dry it with paper towel.

Step 2

Cut it into small pieces.

Step 3

Then cut all vegetables – it will be easier to cook. Cut all in cubes. Cut all finely, get oriented to the size of corns. Start with onion.

Step 4

Then cut the carrot.

Step 5

Then cut sweet pepper.

Step 6

Then – marrow.

Step 7

Heat the olive oil on the frying pan. Put pieces of chicken there. Fry for 3-4 minutes, sprinkle with salt and pepper.

Put to the bowl and put cover on top keeping it warm.

Step 9

Put onion on the same frying pan. Fry for 1-2 minutes on medium heat until it gets transparent. Add a tea spoon of paprika and a pinch of chili.

Step 10

Then add carrots and sweet pepper. We have to fry all vegetables quite fast to keep them crispy. It should take 2 minutes.

Then add marrow and finely chopped garlic. Fry for another 2 minutes.

Then add wine and get it evaporated for 3 minutes.

Put rice on the frying pan. Heat over all together for a couple of minutes to make the rice get filled with all juices.

Then add chicken and corn.

Step 15

Add tomato puree, mix up.

Step 16

Pour hot water or broth, add tea spoon of salt, mix up well 1 time only and cover it. Low down the heat and leave it for 20-25 minutes. Do not touch the cover! We should not breach the temperature process happening in the frying pan. You will understand that liquid has evaporated looking at the cover – the drops will stop dripping if inclining the frying pan. When the rice is ready, remove the cover and put the towel on top of the frying pan for 7-10 minutes to make the extra liquid soak in.

Step 17

It is excellent with fresh vegetables and green. Good with wine which you added when cooking.
