Profiteroles with cheese and carbonado
I described in detail what it is in the recipe of profiteroles with mushrooms. This time let’s prepare them with ham (carbonado) and cheese. I keep saying that it is one of the most festive and loved by me appetizers! It is nice, convenient and tasty! What is more important, it is sophisticated.
Ingredients:
For profiteroles:
- Butter – 100 g;
- Water – 1 glass;
- Flour – 1 glass;
- Eggs – 5 pc.
For filling:
- Cheese – 300 g;
- Carbonado or ham – 300 g;
- Dill – a bunch;
- Mayonnaise – 4 tbsp.
Step 1
Pour water in a small saucepan, cut butter into big cubes and put into the water. Put on the heat as we need to boil it.
Step 2
As soon as it gets boiled, turn over the flour into the saucepan and immediately take it from the heat.
Step 3
Mix up fast. You will get such mass.
Step 4
Then beat in eggs one by one and mix up until the flat mass after each of them.
Step 5
As a result, we’ll get such a smooth mass.
Step 6
Heat the oven in convection mode until 200 degrees. Coat the cold baking pan with baking paper. We happened to miss it and we took the foil but it is worse. Using a table spoon, shape profiteroles (2/3 tbsp) and put them on the baking pan with a distance from each other as they tend to grow in size while baking. Put into the oven for half an hour. Do not open!
Step 7
Grate cheese on a small grater. Finely chop the dill and put to the cheese.
Step 8
Slice carbonado into thin sticks.
Step 9
Put carbonado to cheese, add mayonnaise and mix up.
Step 10
When the profiteroles are ready, take them out of the oven. Immediately unstick them from the foil (later it’ll be impossible). It’s much easier to unstick them from baking paper.
Step 11
Cut the profiterole longwise with a sharp knife and put the filling inside.
Step 12
Cover with a dough top. I recommend to fill in the profiteroles immediately before serving to the table because the filling will soften them.
