Lent muffins with cherry
Lent days are not a reason to stay without sweets. I offer you a wonderful recipe of Lent muffins with cherry. They have so good taste and aroma that even those who don’t follow Lent will definitely like muffins.

portions Ingredients:
- Frozen cherry without cores – 300 g;
- Flour – 1.5 glass;
- Baking powder – 1 tea spoon;
- Cacao – 2 tbsp;
- Cinnamon – 1 tea spoon;
- Oil – ½ glass;
- Liquid honey – 2 tbsp;
- Sugar – ½ glass;
- Vanilla extract (sugar) – 1 tea spoon;
- Salt – pinch;
- Sugar powder for serving – 2 tbsp.
Step 1
Unfreeze cherry. Collect carefully the cherry juice in a glass. Make the glass full with boiling water. This is liquid needed for our dough.
Step 2
Sieve the flour with baking powder in a bowl.
Step 3
Add cinnamon and cacao in it.
Step 4
Mix oil, honey, cherry water, sugar, vanilla extract and salt in the other bowl. Stir up.
Step 5
Add dry ingredients into the liquid ones and stir up only with a few movements. We don’t need flat dough to make muffins lift up while baking.
Step 6
Add cherry into the dough and stir up fast. It’s better to whip with a spoon. I’m skilful as I made a picture of wire whisk but replaced it to spoon later.
Step 7
Cover muffin pans with baking paper or grease them with oil. Arrange the dough into pans.
Step 8
Put into the oven pre-heated until 180 degrees for 20 minutes. Pierce with a toothpick to check if muffins are ready. Take muffins out of the oven, let them cool down and take them out of pans.
Step 9
Top with sugar powder and surprise all. Muffins are so tender with cherries blowing out inside… Аааааааа...
