Panzanella


Panzanella is a classic Italian salad. As any dish, so popular among people, it is cooked differently in different regions of Italy. However, the zest is in bread. It’s better to take Italian loaf, however, initially it used to be Tuscandry bread. For us ciabatta will perfectly work. As for me, I took French baguette this time. If you have no dry bread (me neither), prepare croutons. If you have it, cut into pieces to avoid troubles.

Ingredients:

  • Ciabatta – 1 small or 1/2 big;
  • Cherry tomatoes – 500 g; 
  • Lettuce leaves mix – 75 g; 
  • Onion (ideally – red) – 1 small onion; 
  • Green olives – 1 can (150 g olives); 
  • Olive oil – 6 tbsp; 
  • Red wine vinegar;
  • Salt – 1 not full teaspoon; 
  • Dry oregano and dry basil or mixture of dry Italian herbs – 2 teaspoons.

We take cherry tomatoes because they are tastier. Choose any lettuce leaves but avoid crispy ones like Iceberg. I had a mixture of Corn, Chard and Ruccola. I always recommend taking good olives or cooking without olives at all. I had Greek olives with seeds. It seems that’s all.

Cut ciabatta into pieces.

Step 2

Coat baking pan with baking paper. Break bread into pieces with hands and put on a baking pan. Sprinkle 1 tablespoon of olive oil and top with dry herbs. Put into the oven pre-heated until 190 degrees for 7-10 minutes. Keep an eye! I mix up at least once.

Meanwhile, wash and dry out lettuce leaves.

Wash out tomatoes.

Cut onion into thin quarter-rings. Put into a salad bowl.

Halve tomatoes and add to onion. Somewhere in the middle take out dry bread from the oven, remember? Let them cool down.

Prepare a seasoning. Mix up remaining 5 table spoons olive oil with wine vinegar and salt.

Put dry bread into the salad bowl with vegetables.

Top with seasoning and mix up. Let the bread be coated with seasoning and tomatoes.

Meanwhile, let’s prepare olives. We need to remove the seeds. Of course, we may leave them like in the Greek salad. But in this salad it is better to spend time for opening olives.

I remove seeds with hands. Put olives into the salad bowl.

Finally add lettuce leaves (to avoid them turning sour). It is ready. We have eaten it almost with the bowl.
