Vegetable fritters
It is a wonderful recipe for those who like vegetables. For instance, I am an ardent fan of hash browns. So, I like these fritters. There is little flour in the recipe, so be careful as they are so tender that can be easily torn.

portions Ingredients:
Potato – 4 pc;
Carrot – 1 pc;
Onion – 1 small;
Marrows – 2 small pc (700 g);
Eggs – 2 pc;
Flour – 4 tbsp;
Salt, pepper;
Dill – a small bunch;
Oil;
Sour cream for serving.
Step 1
Wash out and peel all vegetables. I have young marrows, so no need to remove seeds. Potato is also young, so it’s good to peel it using a metal sponge for washing saucepans.
Step 2
Then install grater in the food processor and start. You may grate manually on a small grater if you want to reinforce your muscles. It’s simply faster in the food processor. So, grate potatoes, having cut them in big pieces in advance. When you put it from the processor to a bowl, squeeze out well the extra liquid with hands.
Step 3
Cut carrot and onion in big pieces and do the same as with potatoes.
Step 4
Put over to potatoes.
Step 5
Cut and grate marrows as well.
Step 6
Also squeeze out extra juice, when you put them over.
Step 7
Beat eggs into vegetables and mix up well.
Step 8
Then add flour, salt and pepper. Mix up well.
Step 9
Finely chop the dill and add to the “paste”.
Step 10
Heat the oil on a frying pan and put fritters with a spoon. Try to make them thin to let them fried well. Fry on medium heat for 2-3 minutes.
Step 11
Turn them over and again fry for 2-3 minutes.
Step 12
Serve with sour cream and favourite green.
