Vegetable soup with rice and curry
Замечательный суп - вегетарианский, но в то же самое время очень сытный. Очень интересно сочетаются овощи с карри, ярко выступает болгарский перец. Мне очень понравился суп. Вкус настолько интересный, что совершенно не чувствуется "бедность" или отсутствие мяса.

portions Ingredients:
- Rice – 1 glass;
- Onion – 2 average pieces;
- Carrot – 1 big pc;
- Sweet pepper (red) – 2 pc;
- Cabbage – ¼ head;
- Celery root – 1/3 pc (200 g);
- Tomatoes – 4 pc;
- Curry – 1 tbsp;
- Paprika – 1 tea spoon;
- Chili pepper – ½ tea spoon;
- Dill – 1 bunch;
- Salt;
- Olive oil – 4 tbsp.
Step 1
Wash out the rice. We are going to boil it in the soup but still we need to wash it.
Step 2
Wash and peel the vegetables.
Step 3
Cut all vegetables at once to make the process more convenient. Cut onion into quarter-rings.
Step 4
Grate the carrot on a big grater.
Step 5
Remove the stalk and seeds and from the sweet pepper.
Step 6
Finely slice into sticks.
Step 7
Cut the cabbage the same way – into sticks.
Step 8
Grate the celery root on a big grater.
Step 9
Throw rice into the boiling water and leave to cook for 10 minutes.
Step 10
Heat a big frying pan with olive oil. Put onion there and stew for a couple of minutes mixing up.
Step 11
Then put the carrots and celery root. Stew all together for 5 minutes more. Do not forget to mix up.
Step 12
After it put sweet pepper into the frying pan and leave for 5 minutes more.

10 minutes later put cabbage into the saucepan with rice.
Step 14
Put tomatoes cut into quarter-rings to the frying pan.
Step 15
Mix up, heat for a couple of minutes, sprinkle with spices (curry, chili and paprika) and salt.

Put our fried vegetables into the soup. Do not be afraid to see different saucepans on the picture. When cooking, I understood that 3-litre saucepan is not enough for me and took a saucepan for 4 litres.

Meanwhile, cut out stalks of dill.
Step 18
Chop the dill and throw to the soup.
Step 19
Mix up, try for salt and also rice with cabbage and turn off. Put the cover on and leave for 10 minutes to help it to get saturated.
Step 20
Serve with cereal bread toasts.
