Muffins with cheese and dried tomatoes
This is an absolutely Mediterranean variant! It seems like Italian or French recipe. It is very simple but incredibly tasty!
Ingredients:
- Flour – 1.5 glass;
- Baking powder – 1 tbsp;
- Cheddar or Gruyere cheese – 150 g;
- Kefir – 1 glass;
- Eggs – 2 pc;
- Butter – 70 g;
- Dry basil – 1 tea spoon;
- Dry oregano – 1 tea spoon;
- Dried tomatoes – 4-5 halves;
- Salt – 2/3 tea spoon.
Step 1
First, melt the butter on low heat on the oven or in microwave oven. Leave to cool down. Sieve the flour into a bowl, add baking powder and salt. Stir up.
Step 2
Grate cheddar on a big grater to the same bowl. It’s better to take cheese with an interesting flavour. Stir up.
Step 3
Then add herbs and stir up again.
Step 4
Stir up kefir and eggs in the other bowl.
Step 5
Pour melted butter there. Stir up.
Step 6
Cut dried tomatoes into small pieces.
Step 7
Add liquid ingredients into dry ones and stir up. Do not do it for a long time, just to let the flour soak in. It’ll make muffins crumbly. If you stir up until the perfect flat mass, they will be extra pressed out.
Step 8
Then add tomatoes and stir up.
Step 9
Arrange in baking pans.
Step 10
Put into the oven pre-heated until 200 degrees for 25 minutes.
Step 11
Let cool down and take out of the pans. They are tasty both cold and hot.
