Onion soup
Mmmm... onion soup... Personally, I like it very much! It’s hot and delightfully viscous… Hard to express. It’s been always incredible to cook the restaurant dish at home… I appear to be able to do it and it turns out to be not so hard. Dear friends, do not try to replace the broth with water. This is just the case when it will spoil the whole story.

portions Ingredients:
- Onion – 600 g (I had 7 small onions);
- Butter – 100 g;
- Beef broth – 1.5 litre;
- Thyme – 2 twigs;
- Bay leaf – 2 pc;
- Baguette – 4 slices;
- Gryuere or Cheddar cheese – 150 g;
- Salt, fresh ground black pepper.
Step 1
Cut the onion into thin quarter-rings.
Step 2
Heat the butter in a thick-bottom saucepan and place onion as soon as the butter is melted. It’s important not to miss the moment, otherwise the butter will burn. Mix up, add bay leaf and thyme. Stew on low heat for 20 minutes, mixing up from time to time.
Step 3
The onion should turn to such delightfully brown colour. And the caramel is left on the bottom.
Step 4
Pour the onion with hot broth. Scratch caramel from the bottom using spatula and leave to cook uncovered on low heat for an hour. In this recipe I prefer beef broth and I always have it frozen in the fridge. Chicken broth is not as good as beef but you may also use it. In any case, you may cook on water but the aroma will be different, of course. If you have time, make fresh broth.
Step 5
The soup will turn into dark brown colour. Sprinkle with salt and pepper.
Step 6
Fry bread. I didn’t want to put 4 pieces into the oven, so I used a toaster (by the way, I had farmer baguette made of half wheat and half rye flour, that’s why it’s grey).
Step 7
Pour over the soup into heat-proof pots (I had two portions). Grate cheese on a small grater and divide into two halves. Take half of cheese and divide it equally between the pots, place inside.
Step 8
Place dry pieces of bread on top.
Step 9
Now add the second half of cheese dividing between the ports.
Step 10
Place in the oven pre-heated until 180 degrees for 8-10 minutes. If you have grill, place for 8-10 minutes there. Take it out, let it cool down a bit as it’s ve-e-ry hot and serve to the table.
