Lemon Pie
I adore all lemon-made! And this pie is now my Favorite Favorite for many years. I recommend it to serve for romantic dinner on February 14th. It is sour-sweet, very nice and excellently suitable for this occasion. It is perfect on any other day as well! Just because with all its advantages and good look, it is very easy to cook.
For dough:
- Butter – 225 g;
- Sugar – 80 g;
- Flour – 280 g.
For sweet liquor;
- Eggs – 5 pc;
- Sugar – 1 glass;
- Lemons – 4 pc;
- Flour – 1 full tbsp.;
- Baking powder – 1 tea spoon;
- Sugar powder for serving – 3 tbsp.
Step 1
Melt the butter on low heat.
Step 2
Take the necessary amount of sugar. I prefer brown sugar as I like the color more.
Step 3
Pour sugar with melted butter.
Step 4
Mix up for a couple of minutes to get the sugar melted.
Step 5
Add flour and knead the dough.
Step 6
It should be very soft and elastic.
Step 7
Take the pan (mine is with 28-cm diameter) and arrange the dough in it.
Step 8
Shape the edges with hands and finally make it flat. Put it into the oven pre-heated until 175 degrees for 20-25 minutes until the golden color.
Step 9
While baking the cake, let’s prepare sweet liquor. Beat eggs and put sugar into the bowl.

Whip for a couple of minutes.
Step 11
First, grate the zest of half a lemon not touching the white part of the skin. Then squeeze the lemon juice. As lemons are different, we need 2/3 glass of juice. Pour the juice into the bowl with eggs and sugar and whip for another 30 seconds.
Step 12
Then add flour, baking powder and zest. Whip once again.
Step 13
Take out our cake. Low down the temperature in the oven until 160 degrees.
Step 14
Coat the cake with the sweet liquor.
Step 15
Put into the oven for 20 minutes more. Take out and cool down.
Step 16
Top with sugar powder.
Step 17
Serve to the table and try not to eat at once.
