Chicken fillet stuffed with mushrooms
It is a very tender but dietetic dish. Of course, this recipe will not suit those who are on a diet of grated boiled cabbage. It’s relatively dietetic. Nothing is fried. Mushrooms are stewed with onion in sour cream (the fatter is sour cream, the tastier and thicker the sauce is). You can take out cheese but I like that it makes the sauce thick.
With all this it is very tasty. It is a real contradiction for those who consider dietetic food to be tasteless.

portions Ingredients:
Chicken fillet – 600 g (4 pc or 2 breasts);
Champignons or oyster mushrooms – 300 g;
Onion – 1 pc;
Sour cream – 250 g;
Cheese – 150 g;
Dill – a small bunch;
Olive oil – 2 tbsp;
Salt, grated black pepper.
Step 1
Cut the onion.
Step 2
Wash out and cut the mushrooms. Do not forget that mushrooms don’t like water, so wash out fast or wipe with a wet napkin. Cut into average pieces 0.5 x 0.5 cm.
Step 3
Heat up olive oil and put onion there. Fry for a couple of minutes on medium heat until the first brown spots.
Step 4
Then add mushrooms to the onion and fry for 3-4 minutes, regularly mixing up. Mushrooms have always different behavior. We need the moisture given by mushrooms to be evaporated. So, the time may increase.
Step 5
Then add sour cream and keep mixing up. Stew for 5 minutes.
Step 6
Meanwhile, grate the cheese on a small grater.
Step 7
Add cheese to the frying pan. Mix up well until the cheese will fully melt.
Step 8
Stew on small heat for another 5 minutes. Sprinkle with salt and pepper.
Step 9
Meanwhile, finely chop the dill (without stalks).
Step 10
Add dill into the sauce, mix up and switch off.
Step 11
Wash out chicken fillet and dry out with paper towel. Then finely slice into portion slices. Tenderize a little with a flat side of the meat mallet to avoid breaking the fibres. Sprinkle with salt and pepper from both sides.
Step 12
Prepare square pieces of foil. The size is approximately 20 х 20 cm. Grease the foil square with oil.
Step 13
Put the chop in the middle of the square and top with stuffing – approximately a full table spoon.
Step 14
Fold up the edges of the fillet covering the stuffing.
Step 15
Lift up foil edges and wrap them like a knot.
Step 16
Make other knots in a similar way and put them all into the frying pan.
Step 17
Put into the oven pre-heated until 200 degrees for 30 minutes. Then take it out, open carefully and put into the oven for another 10 minutes.
Step 18
Serve with favorite vegetables and greens.
