Quiche with forest mushrooms


Voila, this is another option of my favourite quiches. This time it is with forest mushrooms. It is not a problem to buy them frozen the year round. It’s so cozy, aromatic and very tasty!

Ingredients:

  • Butter – 150 g;
  • Flour – 2 glasses (300 g);
  • Cold water – 2 tbsp;
  • Salt – ½ tea spoon;
  • Forest mushrooms frozen or fresh – 800 g;
  • Onion – 2 pc;
  • Cream – 300 ml;
  • Cheese – 150 g;
  • Eggs – 4 pc;
  • Nutmeg, black ground pepper, salt;
  • Oil – 3 tbsp. 

Step 1

Put frozen mushrooms into the colander and wash them out under running cold water.

Pour with cold water and start cooking.

After boiling sprinkle with salt and cook for 10 minutes on medium heat.

Meanwhile finely chop the onion.

Step 5

Heat the oil on the frying pan and parboil the onion for 3 minutes until it gets soft.

Drain off the water from cooked mushrooms.

Put them to onion, put the cover on and stew for 25 minutes, mixing up from time to time.

Meanwhile, you may prepare the dough. Put the butter cut into cubes, salt and flour into the food processor. Stir up for two minutes. Do not let the butter melt.

Then add cold water into the dough and mix up again.

The dough should be rolled up. If it hasn’t happened, add a spoon of water.

Arrange the dough in the sliding pan and make the edges slightly pressing with fingers.

Using foil, make sticks.

Put them on the edges of dough to prevent from falling. Put into the oven pre-heated until 180 degrees for 15 minutes.

Prepare the dressing. Stir up eggs with spatula. Mix up with cream, nutmeg and black pepper. Sprinkle with salt.

Grate cheese on a big grater.

Sprinkle mushrooms with black ground pepper when they are ready. If you still see water in the frying pan, cook mushrooms without a cover for the last 5 minutes to make the water evaporate.

Take out the dough from the oven, remove the foil.

Put the mushrooms.

Top with cheese.

And pour the dressing.

Put again into the oven for 40 minutes until it gets brown.

You may serve both warm and cold.
