Quesadilla with chicken
One of the most classic recipes of Mexican cuisine is quesadilla. In fact, it’s tortillas with much cheese in between, any filling (vegetable, mince meat, chicken) and baked in the oven. So, the dish is rich and tasty.

portions Ingredients:
- Tortillas – 6 pc;
- Chicken fillet – 4 pc (2 breasts);
- Cilantro – bunch;
- Ground cumin – 1 tea spoon;
- Young coriander – 1 tea spoon;
- Paprika – 1 tea spoon;
- Garlic – 2 cloves;
- Olive oil – 6 tbsp;
- Sweet pepper – ½ pc;
- Red onion – 1 pc;
- Tomato – 1 pc;
- Preserved corn – 1 small can (160 g);
- Chili sauce (ketchup) – 1 tbsp;
- Cheddar – 250 g;
- Edam – 250 g;
- Black ground pepper, chili, salt.
Step 1
Cut chicken fillet into thin sticks.
Step 2
Place in a bowl and sprinkle with spices – paprika, cumin, coriander, black pepper, chili and salt.
Step 3
Add finely chopped cilantro and pressed out garlic.
Step 4
Pour 2 table spoons of olive oil and mix up. Get the cover and place in the fridge for half an hour.
Step 5
Meanwhile, cut vegetables. Cut the pepper into sticks.
Step 6
Cut the onion into semi-rings.
Step 7
Cut tomatoes into cubes.
Step 8
Heat over 4 remaining table spoons of olive oil on a frying pan and place the chicken there. The heat should be strong.
Step 9
Fry until the brown crust. Then place in a bowl.
Step 10
Put the onion in the same frying pan. Fry for a couple of minutes on medium heat.
Step 11
Then add pepper and a little hot water to scrape chicken brown crust from the bottom of the frying pan.

Add tomatoes. Stew all together for 5 minutes. Then place it in the bowl with chicken.

Place the corn their and mix up all.

Then mix with tomato sauce.

Grate the cheese on a big grater.

Coat the baking pan with baking paper, grease with oil. Place tortilla. Top with a layer of cheese.

Place a layer of filling.

Then place again a layer of cheese.

Top with the second tortilla.

Place to the oven pre-heated until 190 degrees for 7-10 minutes until the brown crust. Do the same with the rest.

They are tasty even when cold. However, the next day you will wish to heat them on a frying pan to make tastier.
