Potato Dauphinoise
Potato Dauphinoise is potatoes baked in cream. The name is referred to the name of the region obviously in France. Sometimes this dish is called potato gratin because of the way of cooking – baking until brown crust. I like to add cheese to this recipe, however classical recipe might be without it.

- Potatoes - 1 kg;
- 35% cream - 250 ml;
- Milk - 250 ml;
- Garlic - 3 cloves;
- Bay leaf - 2 pc;
- Nutmeg - a pinch;
- Butter - 3 tbsp;
- Cheese - 175 g;
- Salt, black pepper
It is better to choose cheese with a bright taste and easy to melt, ideally – cheddar or gruyere. This time I had Emmentaler. Besides garlic and bay leaf, you may add your favourite herbs. For instance, thyme will be very good – throw a couple of twigs into a frying pan.
Step 1
Peel, wash out and cut potatoes into rings equal per width. I do it on a special grater, possibly with knife but the rate of accuracy decreases as the cutting time significantly increases.
Step 2
Peel the garlic and put aside one clove for a while. Remove the core from remaining two (if the garlic is not too young) to make it less bitter and cut the cloves into sticks.
Step 3
Melt two table spoons of butter in a deep frying pan and put the garlic and bay leaf there. Fry for a minute on medium heat.
Step 4
Pour the milk and cream into the frying pan and add grated on a small grater or grounded nutmeg.
Step 5
When the sauce is boiling, put potatoes into it and warm up together for 5 minutes. Sprinkle with salt. Slices of potato should semi-raw – slightly soft but not cooked.
Step 6
Meanwhile, coat the baking pan (better ceramic or glass) with a remaining clove of garlic and in 3 minutes – coat it with remaining butter.
Step 7
Put potatoes into the baking pan. I never try to arrange it in a special way or making a special pattern. It is not visible under the cheese. Arrange it accurately trying to avoid breaking slices of potatoes. Pour with remaining sauce (throwing bay leaf away). Sprinkle with pepper.
Step 8
Top with cheese grated on a big grater and put into the oven heated until 170 degrees for 30 minutes.
Step 9
Until the golden crust. Incredibly tasty!
