French apple pie
You know that it’s hard to surprise me! Especially with an apple pie. But this…is hard to express! It is nice, tender, melting… It looks like it comes from a fairy-tale about orients sweets. And what is more interesting – it has absolutely different taste next day after the fridge. For me it tastes perfect 1-2 hours after baking with a ball of ice-cream. However, it was wonderful with coffee in the morning. And by the way, I don’t consider it to be harmful because there is not much butter or flour in it. If you have children, replace for vanilla extract (1 tea spoon).
Ingredients:
- Apples (ideally – Antonovka) – 4 big pc;
- Flour – 60 g;
- Sugar – 70 g;
- Baking powder – 15 g;
- Eggs – 2 big or 3 small;
- Milk – 100 ml;
- Cognac – 1 tbsp;
- Oil – 2 tbsp.
- For dressing:
- Eggs – 1 big or 2 small;
- Sugar – 80 g;
- Butter – 50 g;
- Almond petals (shavings) – 3-4 tbsp.
Step 1
Mix up flour, sugar and baking powder in a bowl.
Step 2
Beat eggs in a plate and stir them up with a fork like for omelet.
Step 3
Pour eggs into dry ingredients, mix up with spatula.
Step 4
The dough will start growing like on yeast. Add milk.
Step 5
When it comes down, add cognac (vanilla) and oil. Mix up and leave for a while. It is very liquid but this is how it should be.
Step 6
Now let’s prepare apples. The secret of beauty and taste is in the way of cutting. Cut apples into quarters, remove the core and finely slice into plates. Do not be lazy.
Step 7
Put them into the dough and mix up with a spoon. It will look like an apple salad in sauce. This is how it should be. Don’t be afraid.

Coat the sliding pan with baking paper.
Step 9
Pour the dough with apples there (apples in dough, to be precise). Mine lie very flat themselves. I only shaped them slightly. Put them into the oven pre-heated until 200 degrees for 25-30 minutes. Bake until golden crust. Mine was baking for 30 minutes.
Step 10
Meanwhile, prepare the dressing. Stir up eggs with sugar. I adore brown sugar. It’s healthier and has a nicer colour.
Step 11
You need to stir them until the white foam and not manually. I spent 3-4 minutes.
Step 12
Melt the butter. I do it in the pot on low heat. Let it stay for a couple of minutes. Then pour into eggs with sugar.
Step 13
Immediately mix up intensively. It is not needed to stir up.
Step 14
Take the pie out when it is ready.
Step 15
Pour with dressing at once and top with almond petals.
Step 16
Put into the oven for 10 minutes more. Keep an eye – until the golden colour.
Step 17
Take it out and let it cool down completely. I was making rounds making the way narrower and kicking myself.
Step 18
As I wrote above, the next day it looks slightly different – not as impressive as before. It’s going down. However, it’s still nice.
