Garlic soup


I borrowed this recipe from Spanish cooks. Completely unexpectedly for me, it turned to be very tasty! I even didn’t expect that such soup might be made of garlic. I definitely recommend to try it!

Ingredients:

  • Ham – 110 g;
  • White bread – ½ pc; 
  • Garlic – 12 cloves;
  • Chicken broth – 1 litre;
  • Worchester sauce – 1-2 tea spoons;
  • Tabasco sauce – 1 tea spoon;
  • Eggs – 4 pc;
  • Olive oil;
  • Salt, fresh ground black pepper.  

Ham might replaced with smoked bacon. I took ciabatta as white bread but any wheat bread will work. I don’t recommend to take loaf as it’s slightly sweet. Tabasco might be replaced with chili pepper, Wooster (Worchester) is irreplaceable.  

Step 1

As you see I have frozen chicken broth. If I have no time to take it out in advance, I place it as a piece in a saucepan and it’s getting unfrozen and heated under the cover on low heat.

Let’s get prepared. Slice the ham.

Cut the white bread into small cubes.

Step 4

Peel the garlic, halve each clove alongside and remove the core as it’s bitter. If you use young garlic, you may avoid this operation.

Step 5

Cut the garlic into thin plates.

Step 6

Fry the ham on a frying pan pre-heated with olive oil for one or two minutes, mixing up.

Step 7

Add garlic and bread to the ham. Fry for another couple of minutes, mixing up.

Pour with hot chicken broth (I added approximately half a litre of hot water). Get it boiled, add Worchester sauce, low down the heat and cook for 15 minutes more. Then add tabasco.

Fry eggs in small pans on a frying pan with oil. (For sure, you understand that eggs might be fried without pans but beauty is known to require victims). In general, you may pour the soup over heat-proof bowls and beat row egg into each of them, then place in the oven pre-heated until 200 degrees for 8-9 minutes. However, I like the first option more.

Pour the soup over the plates.

Top with fried egg and serve immediately.
