Banoffee
It is incredibly tasty cake! I even didn’t expect. It’s very easy to cook. I cooked it for my birthday, so my dad and husband were remarkably excited. By the way! I dislike boiled condensed milk but here the tastes combination is absolutely well-balanced.
Ingredients:
- Spicy (ginger) biscuits – 75 g;
- Ordinary biscuits (I had melted milk biscuits) – 75 g;
- Butter – 100 g;
- Bananas – 2 pc;
- Boiled condensed milk – 250 g;
- Mascarpone – 200 g;
- Sugar – 50 g;
- Sour cream 15% – 400 ml;
- Cacao and sugar powder for coating – 1 tbsp each.
Step 1
Melt the butter.
Step 2
Crush biscuits and blend to crumbs in a blender or food processor.
Step 3
Place crumbs in the bowl, pour melted butter and mix up.
Step 4
Take a sliding pan and place the mass on the bottom, press down with fingers. No need to shape edges. You may press down using a glass bottom if you don’t want to do it with fingers. Place in the fridge to cool down for 10-15 minutes.
Step 5
Cut peeled bananas into rings 0.5 mm thick.
Step 6
Place bananas over the surface of the base.
Step 7
Top with boiled condensed milk distributing over the surface of bananas. Place again into the fridge for 15 minutes.
Step 8
Stir up mascarpone with half sugar in a small bowl.
Step 9
Stir up sour cream for a couple of minutes in the other big bowl, then add the sugar left and stir up again for 2 minutes.
Step 10
The add mascarpone in portions and stir up until the flat cream (I divided mascarpone into 4 parts and stirred up 1 minute after each portion).
Step 11
Take out banoffee from the fridge, put the cream on top and place again into the fridge for one hour at least (I kept mine for two hours).
Step 12
Before serving to the table take out the cake, cut with knife carefully along the sides and remove the pan.
Step 13
Place cacao and sugar powder into the sieve and sprinkle the cake on top. For instance, you may cut the Christmas tree out of the paper. Then place it on the cake, sprinkle with the mixture and remove – you will get a drawing.
Step 14
Cut carefully till the base – it’s hard. In 15 minutes I could find less than a half of the cake – it was disappearing on the eyes.
