Fast Banitsa (Bulgarian cheese pie)
This is another option for weekend breakfast. No hassle at all but possible to get the whole family around the table for breakfast or tea – what else is needed?

Ingredients:
- Kefir – 250 g;
- Soda – ½ tea spoon;
- Eggs – 4 pc;
- Brynza – 250 g;
- Olive oil – 5 tbsp;
- Flour – 14 tbsp.
Step 1

Pour kefir into a bowl, add soda and beat eggs into it.
Step 2

Stir up with a mixer for a couple of minute.
Step 3

Then grate brynza on a big grater. Mix up.
Step 4

Add oil. You may use butter but I won’t tell you about fat increase, ok?
Step 5

Then sieve the flour. And stir up until the flat mass.
Step 6

Pour the dough into a baking pan greased with oil.
Step 7

Put into the oven pre-heated until 200 degrees for 25 minutes.
Step 8

Serve warm.
