Gaspacho Bar At Tarantino Restaurant

There are four kinds of fresh summer gazpacho offered at the Tarantino Restaurant from the chef Viktor Apasiev.

Aromatic and bright red gazpacho is cooked per classical recipe: tomatoes, cucumber, celery, red onion, spices and balsamic. Green gazpacho is made of green pepper, cucumbers, sherry, basil, white bread and mineral water. Yellow gazpacho consists of mixed yellow sweet pepper, melon, mint, white wine and a little cream. The most interesting is white gazpacho made like Spanish soup Ajo Blanco with abundance of sweet grapes, almonds and white wine.

When gazpacho is ready it is poured over glass bottles and kept in the gazpacho-bar in a special can filled with crushed ice for 1 day. When a guest orders gazpacho, the filling is prepare right away using tomatoes concasse, curved celery slices, young fresh greens and served in a separate plate. Then the filling is poured with selected gazpacho in front of guest's eyes.
